When planning your 4th of July menu, think about incorporating your favorite summer foods in creative ways. Whether that means a fruity pizza, a festival-themed snack, or an all-red summer salad, 4th of July appetizers are meant to strike that perfect balance of light but filling — so your guests can save room for the firework-decorated cookies, but won’t be hungry as they wait for the burgers to be ready. I made a couple of different variations, experimenting with the base ingredients.  The first one I tried had mayonnaise in it, and I decided on my next try to leave that out and go with cream cheese.  It’s always nice when you are leaving a dip out at room temperature so you don’t have to worry about mayonnaise. I also adjusted the level of heat, which comes from the jalapeño and cayenne pepper. I saw a few blog posts around Easter for dyed hard-boiled eggs. I thought they were so cute so I decided to give them and try for the 4th of July. They looked and tasted great! These deviled eggs would be a great addition to your holiday BBQ next week. The dying process is very simple and doesn’t require any vinegar. It requires only three ingredients – peeled hard-boiled eggs, water, and food coloring. I let the eggs sit in the dye for about 2 hours and then sliced them for deviled eggs. They had a great ring of color around the edge of the egg. I thought they looked great! The possibilities are endless!

Did you know that there is a difference between a sweet potato and a yam?  I’ve always thought they were basically the same, orange-fleshed potato.  That’s until recently discovered white sweet potatoes. The orange variety is marketed as yams.  White sweet potatoes look like regular potatoes but have sweet flesh. It’s kind of a mind trick when you’re eating them. That’s why I thought they would make great french fries!

Sweet dates stuffed with creamy goat cheese, wrapped in salty bacon, then tossed in rosemary honey that’s hinted with just a touch of spice. Bake these bites up in the oven until the bacon is crisping and “candied”. There never seems to be enough of these bites…addictive, festive, and perfect for holiday entertaining! I had to give these a special touch. SO, I added in rosemary honey that’s hinted with cayenne pepper. The honey gives these dates a sweet, savory, and spicy taste. The salty bacon with the sweet and spicy honey makes for the best combo, but beware, these are highly addictive. Yes, this is the third time I’ve used addictive in this post, but it truly best describes these dates.

But put bacon on a cracker, and that’s an appetizer that every carnivore can get behind. As tempting as a nice thick piece of bacon might sound, thinner bacon actually works best for this recipe, since thick-cut bacon takes longer to crisp up and might make the crackers burn. Don’t be shy with the brown sugar–it helps to weigh down the bacon so it doesn’t curl up, and there’s no illusion that these bacon crackers are a healthy food anyway.
