12. Crispy beer battered cauliflower

 Crispy beer battered cauliflower

It’s no secret that I love cauliflower. I’ve used it in every way imaginable but battered in a beer batter and fried until crisp and golden might be one of my most favorite ways. At the very least it’s in my top 3. Because who can say no to a big dish of gloriously golden crunchy cauliflower bites? No one, that’s who! Fried cauliflower is the perfect game day snack or appetizer. I served the cauliflower with lots of lemon juice and a quick mayonnaise dipping sauce made with chopped capers, lots of parsley, and creamy mayo. It was the perfect accompaniment and made the fried cauliflower even more delectable. Battered cauliflower will take around 5-7 minutes to fry. The hot oil will cook the cauliflower at the same time the battery takes to turn golden and crisp.

For any of you who have not made beer bread before, let me assure you — it’s basically the easiest bread to make EVER. There is no kneading involved, no rising, and basically no mistakes possible. Just stir a few simple ingredients together with a bottle of beer (which acts like the yeast), pop the batter into a bread pan, and bake it up to that delicious, warm and flavorful perfection. You’ll see that I used cocoa powder and  2 squares of unsweetened baking chocolate in these beer brownies. I really believe in my heart of hearts that the best brownies are made with unsweetened chocolate. However, you can omit the unsweetened chocolate, or use half the amount. These brownies hit you in the face with their rich chocolate flavor.
