It’s a quick-baked method that turns out buttery, lemony, garlicky, CRISPY shrimp every time. So simple and just so very good – it’s a real winner.

It’s a recipe you don’t really need to measure for – you can use a little less butter there, a little more lemon here, a little extra garlic if you feel like it (always) – and it will still turn out amazing. That, coupled with the extremely delicious flavor and crispiness, makes it perfect for dinner on the fly. It’s certainly a family favorite, but it’s special enough that it works for the company too.

16. Juicy Oven Baked Chicken Breasts

 Juicy Oven Baked Chicken Breasts

There’s nothing quite as satisfying as a juicy oven-baked chicken breast. The tender white flesh, steam pouring out of it after you make the first cut… your mouth starts to water just writing about it! One of the reasons chicken is so popular is that chicken breast is one of the cleanest, healthiest proteins you can eat. Of course, depending on how you cook it, that can change. Battered, deep-fried chicken isn’t as healthy as, say, a simply seasoned chicken salad. But compared to many red types of meat, and even to other parts of the chicken, the breast is high in protein and often has very little fat content.

10. Baked Feta Pasta with Cherry Tomatoes

Baked Feta Pasta with Cherry Tomatoes

Beloved feta cheese melted to perfection to make a creamy Baked Feta Pasta with Cherry Tomatoes. This trendy pasta dish is everything a feta cheese lover needs in carb form. Enjoy a dreamy dinner with this easy recipe. Truly the star that makes this dish great is feta cheese. What makes this recipe so popular is using a block of feta cheese and placing it smack dab in the middle of a baking dish with the tomatoes.

Although you can probably use crumbled feta cheese for the same end result it just doesn’t compare to the block style. Blocks of feta cheese are available at most grocery stores. Any pasta you have on hand will do although this recipe used cavatappi pasta. Feel free to substitute with low-carb pasta options (like spaghetti squash noodles) or gluten-free pasta.

6. Mediterranean Baked Feta

Mediterranean Baked Feta

This Mediterranean Baked Feta is an irresistible, quick, and easy summer appetizer. Pile salty feta with sweet cherry tomatoes and herbs and heat in the oven until warmed throughout. Easy peasy! Personally, I loved the brightness of this dish – fresh tomatoes and herbs (I loaded it up!), salty feta…. Everything warmed so that the cheese was spreadable and the natural sweetness of the tomatoes came out. And the smell – amazing! Usually make this recipe without the olives, as you can see in the photos.

Also, I have made it with the olives and enjoyed it, but too many of my guests aren’t fans. Even, I like to serve this with pita pieces, although you can also do pita chips or crackers.

3. Low-Carb Easy Cheesy Zucchini Bake

Low-Carb Easy Cheesy Zucchini Bake

You’ll love this Low-Carb Easy Cheesy Zucchini Bake which is the most popular zucchini recipe of all the Top Ten Low-Carb Zucchini Recipes on my blog! The other change I made was to switch this time from an 8-inch square casserole dish to one that was 8 inches x 11 inches. I really did like the way this larger dish let the zucchini spread out more so each piece was covered with cheese, but once again, take your choice on that!

And zucchini season is here or neatly here for many of you, so when you get zucchini from your garden or the farmers market, you must try this, or make it again if you’re already a fan! Sprinkle the remaining grated mozzarella or pizza cheese (and a little more Parmesan if desired) and bake 10-15 minutes longer, or until the cheese is nicely melted and slightly browned. Serve hot and enjoy.

2. One Skillet White Chicken Chili Bake

One Skillet White Chicken Chili Bake

This simple One Skillet White Chicken Chili Bake makes for the best weeknight dinner. It’s an awesome twist on classic chili. Made with poblano peppers, jalapeños (for just the right amount of heat), and seasoned chicken. It’s spicy, creamy, and so delicious, with a bit of rice baked right into the sauce. Top each quick skillet dinner with cheese, bake, and then add fresh cilantro and avocado too. All that said, I love a simple, easy recipe. It just needs to have some spices, you know?

This chicken is exactly that, simple but flavorful, and we just love a dinner all made in one skillet. As the title announces, these baking recipes come together in a skillet. I use my Staub skillet, but any oven-safe skillet is great!

1. Crispy Baked Eggplant Parmesan

Baked Chicken Breast - baking recipes

This Crispy Baked Eggplant Parmesan is healthy, easy, and delicious. A different way of slicing the eggplant allows it to stay super crispy even though it is baked in the oven. Do you love crispy eggplant parmesan? Although eggplant parmesan is a beloved classic dish, one thing people tend to struggle with is how to make eggplant parmesan that isn’t soggy.

I decided to take on the challenge with this Crispy Baked Eggplant Parmesan. First of all, I wanted to create a baked eggplant parmesan recipe because baking is easier and healthier than frying. In order to create baked eggplant parmesan that is crispy but still has enough sauce and cheese, I decided to change how the eggplant was cut.

Rather than slicing it into rounds, which is what most baked recipes do, I decided to slice the eggplant vertically into long planks. This gives the eggplant more surface area and allows enough room for sauce and cheese while the edges can still stay crisp.
