Whenever buying tomatoes, use organic ones. Or grow them on your balcony, terrace, or garden. I always buy organic tomatoes, onions, and potatoes. There are some ingredients that come from abroad and have become part of Indian cuisine. Tomatoes, potatoes, and chilies are ingredients that are used often in Indian homes. You must have heard before that risotto is best if it’s made just before serving. The reality is that it’s best FINISHED just before serving ;). So what you can do previously (up to 2 days beforehand) is to start the recipe and stop when the rice is still very crispy and just starting to soften on the outside. Then reserve this par-cooked risotto and when you’re close to serving time, add more stock and continue with the cooking and serve. That way they will melt where they are. Because, if you mix, you’ll get a goopy mess. You can serve this with caprese salad or toast and topped with fresh chopped tomato avocado.
