16. Crunchy Taco Cups

Crunchy Taco Cups

How fun are these little Taco Cups made in a muffin tin?? I don’t think I’ll ever find another taco recipe I love more than these wonton tacos. They have double layers of a crunchy taco shell, seasoned beef, spicy tomatoes, and gooey cheese all in one perfect bite! These crunchy taco cups are such a huge hit because I prefer soft tacos but my father prefers crunchy tacos. So whenever we had taco night, we always had to make two different kinds of taco recipes. BUT, this taco recipe is the best of both worlds. The outside is satisfyingly crisp and crunchy, but the inside is soft and melty! Just how I like it. We both loved them!

15. Chicken Fajita Tacos with Cotija Cheese

Chicken Fajita Tacos with Cotija Cheese

These Chicken Fajita Tacos with Cotija Cheese are light, refreshing, and healthy! You will love the bright, crisp flavor with just a touch of lime zest! Amazingly good and low fat too. I looooove yellow corn tortillas for their flavor and durability ~ especially when they’re cooked directly over a gas stove on the grate. It makes them slightly crispy and a bit chewy with toasted edges, which adds such a great texture and toasted flavor to your tacos. The tortillas sort of sink down between the grates in the middle while the edges get toasted and crispy. But that flavor is wow amazing! What you’ll love about this recipe too is that the chicken is so moist and flavorful, coated with Mexican spiced seasonings that are sssssooooo good!

These chicken birria tacos, also called quesabirria tacos, will become your new favorite, and taco Tuesday will never be the same. 5. Huli Huli Chicken Tacos

Huli Huli Chicken Tacos

Take a break from the ordinary and serve up these Hawaiian Huli Huli Chicken Tacos topped with fresh pineapple, mango, and avocado salsa for dinner this Taco Tuesday! It may be the dead of winter around your area, but that doesn’t mean we can’t escape to a tropical paradise, and that’s exactly what we do when we make these spectacular Hawaiian Huli Huli Chicken Tacos. Huli is traditionally a grilled chicken dish over mesquite, that’s basted with a sweet and salty tropical marinade consisting of pineapple juice, soy sauce, and fresh ginger. The sauce is rounded off with ketchup, chicken broth, brown sugar, and garlic, for immense flavor.

4. Fish Tacos with Mango Salsa

Fish Tacos with Mango Salsa

These fish tacos with mango salsa are one of my favorite taco recipes ever! This delicious dish is made with Cajun-spiced fish, mango salsa, red cabbage carrot slaw, and mango sauce. You will be thrilled at how flavorful but also light and refreshing they are! This recipe was inspired by many fish tacos that we ate on our vacation in Florida. Mango salsa was the most popular topping and we ate them with fish and shrimp. The most popular seasoning was either cajun or blackened seasoning. Most fish or shrimp in these tacos were deep-fried, but really, with so many toppings and sauces you can’t really taste the difference and pan-fried fish is much more healthy.

3. Cauliflower Tacos

Cauliflower Tacos

These Vegan Bang Bang Cauliflower Tacos are slightly spicy and a whole lotta delicious! A tangy slaw, crispy cauliflower, and avocado slices. The cauliflower is your typical process – wet dredge, bread crumbs, bake, sauce, bake again. The wet dredge is made up of flour, corn starch, white pepper, salt, sriracha, non-dairy milk, and water.
You want this to be the consistency of pancake batter. It will coat the cauliflower and help the panko bread crumbs stick. Add the finished florets to a baking sheet and pop it in the oven for 20 minutes. While the cauliflower is baking, it is time to make the bang bang sauce. It is just a simple combo of vegan mayo, sriracha, and rice vinegar. You can adjust the sriracha to your spice level, but I like to add the max amount.

1. Honey Lime Steak Tacos with Avocado Crema

Honey Lime Steak Tacos with Avocado Crema

These Honey Lime Steak Tacos with Avocado Crema are the perfect combination of sweet, spicy, and tangy – a flavor explosion! You guuuyyyysssss. Honey Lime Steak Tacos. With Avocado Crema. Yes, I did.  I was inspired to make a steak version of my Chili Lime Shrimp Tacos but then I kind of veered off in another direction and added HONEY.  Sweet and spicy and tangy and creamy. You guys know how I am with my sauces.  The sauce is boss.
How many more times can I say that before you get annoyed at me?  Is it one?  Or zero?  I’ll try not to say it again.  I’m not making any promises, though. But seriously, the sauces.  The first time I made these  Honey Lime Steak Tacos, I just threw some avocado on top. The taco recipes were good but we felt that they could be better, and what they were missing was something creamy.  Enter the avocado crema.
