Zucchini with Sun-Dried Tomatoes, Bacon, and Crispy Onions

Zucchini with Sun-Dried Tomatoes, Bacon, and Crispy Onions is a flavor-packed side dish recipe that your family will ask for again and again this zucchini season! I have seriously prepared zucchini every single way possible, breaded, baked, shredded, roasted, and grilled, but today’s recipe is back to the basics. Sautéing some veggies in a pan and adding in lots of delicious flavors along the way. This recipe is actually a lightened-up version of one of my favorite winter casseroles. I make almost the same dish, but don’t include the bacon, add cream, and bake it. With hotter temperatures on the way, I wanted to avoid the oven with this version and just make it all on the stovetop. But I like these side dishes for bbq chicken that make you refresh while you take a bite of it.

Classic Macaroni Salad

Tater tots are just one of those foods that everyone loves. How could you not love them?! Whenever I saw them in the school lunch line, or at a ballpark, I knew it was going to be a good day. The problem with them was that they basically had no redeeming qualities when it came to health. They’re basically just blood sugar bombs fried in seed oil. That’s why I knew I had to remake them with veggies and healthy fats! These sweet potato tater tots are made with fresh parsley and healthy avocado oil, and they taste amazing! Honestly, I could probably have these each and every day. Just dip them in a yummy sauce and serve them up next to a burger and you’ve got yourself an incredible meal.

6. Garlic Butter Mushrooms And Cauliflower

Garlic Butter Mushrooms And Cauliflower

The perfect side dish! Chockfull of veggies, easy to make + loaded with garlicky-buttery goodness! Cauliflower, though? Eh, it’s not entirely my favorite. But when you mix the two of them with garlicky, buttery goodness, it’s the perfect marriage. It’s also the perfect accompaniment to any main dish, especially for your vegetarian friends/family members/guests. Sometimes I’ll make this with the cilantro lime chicken thighs (great pairing, BTW) but my plate will be 10% chicken, 90% GB mushrooms, and cauliflower. Balance, folks, balance.

4. Butternut Squash Mac and Cheese

Butternut Squash Mac and Cheese

Creamy, healthy butternut squash mac and cheese is cozy, comforting and so much better than regular mac and cheese. You’ll need less than 30 minutes to make this healthy comfort food! Kids LOVE it! It’s like the best of the two worlds, soup, and pasta. This dish reminds me of thick butternut squash soup and cheesy pasta all together in one dish! The rich and creamy sauce is achieved without any flour or cream in it. Now that’s a winner! (this recipe does not call for making a roux. It’s all squash, milk, and some cheese). I used shell pasta for the recipe. It’s best to use pasta shapes that will help it hold the magical cheesy sauce. Shell pasta, macaroni(elbow pasta), orecchiette, cavatappi, rotini, farfalle, rigatoni, or radiators are the best noodles to use for any mac and cheese recipe.

2. Roasted Brussels Sprouts with Balsamic Glaze

Roasted Brussels Sprouts with Balsamic Glaze

These balsamic bacon Brussels sprouts are irresistibly crispy and flavorful. They’re roasted to perfection, mixed with crispy bacon and sauteed onion, and tossed in a sweet balsamic glaze. You might want to make a double-batch of these because they disappear fast! Who knew Brussels sprouts would turn into such a crowd-favorite vegetable!
But I’m glad they did, otherwise, I wouldn’t have dishes like my balsamic chicken with Brussels sprouts, shaved brussels sprouts salad, roasted Brussels sprouts, or green shakshuka. Not only do Brussels sprouts taste delicious, but they’re high in fiber, vitamins, and antioxidants – making them a healthy superfood. Unlike leafy veggies that have a soft texture, these sprouts hold firm and give you a delicious savory crunch. And when you coat them with my balsamic reduction, the flavors are mind-blowing.
